chocolate porridge with chai mascarpone

Porridge. On first sight this “very english” breakfast might look hardly attractive. Though it tastes oh so nice.  I fell for this dish while being an aupair in Australia. Soft oats keep you from getting hungry too soon and challenge your creativity creating a new taste together with their nutty flavour.

Ingredients for one portion


2/3 cups soft oats

1/2 cups water

1/2 cups milk

2 tablespoons honey

1 teaspoon cocoa

1 teaspoon butter

chai mascarpone

250 g mascarpone

2 tablespoons milk

2 tablespoons honey

2 teaspoons cinnamon

cinnamon apples

1 apple

1 tablespoon honey

1 teaspoon butter

1 teaspoon cinnamon

For the chai mascarpone mix all ingredients together.

Peel the apple, cut it in eighth, pit it and then cut it into small pieces. Place it with butter, honey and cinnamon in a pan and sauté them until soft. Lower the heat to keep them warm in the pan while preparing your porridge.

Place the oats, water and milk in a pot and allow the mix to cook. When you first spot bubbles make sure you reduce the heat to a low level. Stir in the honey, cocoa and butter. After approximately ten minutes of stiring your porridge should be done: nice and smooth. Serve it with the chai mascarpone and the warm cinnamon apples
