There are lots of possibilities to eat avocado for breakfast. But as I quite like my version I would like to share this as the one and only! Just kidding, though this is a really good one: freshly cut avocado on organic rye bread!
Ingredients for one person
2 thin slices of rye bread (I use organic bread)
a handful of cress or optional a tablespoon of toasted sesame seeds
juice of half a lemon
salt, pepper and a little cumin
Start by toasting your bread. I like to use really thin slices because I like to focus on the avocado.
Cut the avocado in halfs. Remove the core by smashing a knife into the core and turn round. Use a spoon to scoop out the flesh as a whole. Slice the avocado and spread on the toasted bread.
Sprinkle with cress or sesame seeds, olive oil, lemon juice, salt & pepper and cumin.
