peas and spinach stir-fry

If you’re looking for a healthy recipe which makes you feel light and refreshed this peas and spinach stir-fry with fresh coriander, mint and lemon will be perfect. It’s a cleansing bowl of greens.

Ingredients for two persons

5 handful of spinach

2 cups frozen peas

1 onion

1 glove of garlic

a small handful of coriander

a small handful of mint

100 ml vegetables stock

1 tablespoon of lemon cests

1 flat tablespoon of cumin

salt and pepper


Start with chopping the onion into small cubes. Place it with a little olive oil in a pan and heat. Press the garlic into the pan and let it all cook for about 2 minutes. Then add the spinach and let it wilt whilst stiring.

As soon as the spinach has wilted add the peas and pour over the vegetable stock. Let it cook for about 4 minutes until the peas are hot.

Chop the coriander and the mint very finely.

Salt and pepper the stir-fry. Add the cumin. You can use as much as you want but I just love cumin so I recommend to use one flat tablespoon. This adds a really nice oriental taste to the vegetables.

Place your cooked in greens in two nice bowls and sprinkle with coriander, mint and lemon cests. Enjoy the fresh taste!

I quite like to eat it just like that as a main dish for dinner, but if it doesn’t really satisfy you, you could eat it with brown rice or sweetpotatoe wedges and guacamole like I had it for lunch the other day.
