forest berries & beetroot bowl

This red smoothie bowl is full of taste and goodness! Maybe all of you have heard of iron deficiency before, especially if you’re a vegetarian or vegan eater. Symptoms are headache, fatigue, hair loss or a pale looking skin. Luckily there’s a lot of iron to be found if you eat the right fruits and veggies. Usually these are the red ones: beetroot, strawberries, red currant etc. which all can be found in this yummy breakfast bowl! Check it out!


Ingredients for one person

300 g mixed berries (either fresh or frozen, I like to use frozen ones: cherries, red and black currant, raspberries, blackberries, blueberries, strawberries)

100 ml beetroot juice (make sure there’s 100% beetroot)

1 tablespoon maple syrup

Put the berries, beetroot juice and maple syrup in a blender, which should be strong enough if you use frozen berries. Blend it until nice and smooth. If your berries were frozen you get like a really nice smooth sorbet, I love that on a warm summer morning. Try if the smoothie is sweet enough. If not, blend it with another tablespoon maple syrup or use as much sweetener as you like. Just remember that you live healthier with less sweetener though maple syrup is a lot better than industrial sugar.

Enjoy your smoothie bowl topped with fresh fruits. As you can see on the picture I also sprinkled it with a bit of puffed amaranth making it all a bit more “breakfast-like”.
