zucchini and sweetpotato fritters

When you try to eat healthy and clean you might get to that point where you would like to eat something really satisfying and you start craving for pasta or pizza. Luckily I haven’t got to that point so far though eating low carb, gluten free and sugar free for more than three months now. It was by chance that this try to combine leftover zucchini and sweetpotato came out so incredible tasty. And though being totally free of so called bad carbs it tastes so rich satisfying your craving while it keeps you feeling perfectly fine.

zucchini and sweetpotato fritters

Ingredients for two persons

2 small zucchinis (about 500 g)

1 sweetpotato (about 150 g)

1 egg

1 tablespoon corn starch (naturally gluten free)

1 tablespoon cumin

1 tablespoon salt

1 teaspoon freshly ground pepper

olive oil

100 g goat cream cheese

100 g cowberry jam (or just heat fresh cowberries with a tablespoon of honey to get jam)

Start with grating the zucchinis and the sweetpotato. Mix the grated vegetables with salt in a bowl and let it set for at least 15 minutes. You will realize that especially the zucchini will loose a lot of water, which is perfectly fine as we don’t want to have falling-apart fritters. Put the grated veggies in a kitchen towel and press out the water. Put them back into the bowl and mix in the egg, corn starch, cumin pepper and then check if you need some more salt.

Here we come to the only disadvantage. You will need quite a bit fat to get your fritters stick together and crispy as you don’t use any flour and only one egg. To stay healthy I really recommend to use good fats just like olive oil. You don’t need to cover the whole pan with oil but at least half of it and heat it.

Use a big tablespoon to place your fritters in the hot pan. Press them down a little (about a thumb high) and make sure they have nice size as this is all making it easier to flip them afterwards. As soon as they seem to stick together and brown on the edges try to flip them over. Be very gentle as they are coming fragile.

Top every fritter with a small teaspoon of goat cream cheese and a small teaspoon of cowberry jam. You can staple them like pancakes or build a little cake if they fell apart, whatever you want. They will still taste awesome.

You’re eating vegan?

When you want to leave out the egg there are two possibilities:

  • change the amounts of zucchini and sweetpotato and leave out the egg. Sweetpotatoes stick together well because of the sugar and starch
  • Add flour and leave out the egg. Add as much flour until it thickens and you seem to get a dough. The gluten will help to stick it together, which is of course no option for people who eat gluten free.

When you don’t want to use goat cream cheese there are two possibilities:

  • just don’t use it. It will still taste really good!
  • replace it for example with a salted cashew cream
